Taqueria Rosales serves authentic Mexican food

BILOXI, Feb 08, 2013 (The Sun Herald - McClatchy-Tribune Information Services via COMTEX) -- Finding authentic Mexican food can be a tricky business. Authentic depends on who, or where, you're referring to in terms of food. Tex-Mex, Baja ... you get the idea.

But the food at Taqueria Rosales is good food that adds flavor and not heat to the taste of what the owners say is authentic Mexican food.

Cynthia Nares, the general manager of the Taqueria (taco stand) said the food should remind one of the kind of food prepared by mom or grandma.

"We want to be more authentic, make our own stuff, to keep it fresh," she said. "We're all about the flavor." The taqueria has been open six months. Nares said business slowed down a little over the holidays, but is picking back up now.

A recent trip to the Taqueria on Pass Road in Biloxi gave us the opportunity to try the Rosales family's fare.

Nares' brother, Luis Rosales, was working when we dined. Another brother who lives out of state owns the Taqueria.

We tried a California burrito, flautas and an order of chips and salsa, although Nares said their signature dish is the tacos.

The chips are freshly made, with a taste more like Fritos than a flour tortilla chip. And the salsa had a darker look than the tomato-filled salsa and had a smoky chipotle flavor that was so good I could have made that my meal. Nares said the corn tortillas are hand-made, cut and fried at the Taqueria to give them the homemade taste.

"If we buy through a distributor, it just doesn't taste as good," she said. "If we make it there, it has the flavor we're looking for." The California burrito is two meals if you're hungry, three if you're not, because it is huge. Beans, meat, lettuce, tomato, a hint of sour cream and guacamole made this a meal in a tortilla. Chicken was my choice, but there are several different meats to choose from.

The flautas -- five of them -- sat on a bed of lettuce and were crisp and fresh and tasted like a flauta should -- with no heavy oily taste.
